Ah, the weird naming conventions of pork butcher cuts vexed me for a bit. The butchers did their butt thing again. Until looking it up, I was thinking ‘pig knuckles’ more like ‘pigs feet’.
i.e. not an ‘exotic’ dish shipping in from a place far away from the city (like the lobster and onions are) but something normally eaten by people in a socioeconomic strata that couldn’t afford *not* to eat all parts of the animal.Report
