    No Cheesecake Factory here in Fort Collins. Now that there’s sit-down dining again I’ve started working my way through the small restaurants here, lunch at one each week. I’m trying to choose the one-offs, or at least, businesses that are no bigger than a handful here in the state. Walking the three blocks from where I parked to the place I ate yesterday made me appreciate just how big a job I’ve taken on.
